Camarones con Tocino (Bacon-Wrapped Shrimp)

This was one of my husband’s favorite meals when he was a kid. He remembers always ordering it at Mexican restaurants. It’s a new meal for me. But, what’s not to love?! Bacon makes everything better. And it’s a fun presentation for kids.
I like to serve the bacon-wrapped shrimp over a bed of arroz {Mexican rice} covered with melted cheese. Garnish with avocado slices and light sour cream.
Camarones con Tocino (Bacon-Wrapped Shrimp)

Bacon-wrapped shrimp make a tasty appetizer or a filling main course when served over a bed of cheesy arroz.
Ingredients
- 6 strips of bacon, cut in half
- 12 shrimp, peeled and de-veined
- Dash of black pepper, optional
- Dash of garlic powder, optional
- Arroz (Mexican Rice)
- Cheese, grated
- Light sour cream
- Avocado slices
Instructions
- Peel, de-vein and rinse the shrimp.
- Pat them dry between two paper towels.
- Sprinkle them lightly with black pepper and garlic powder if desired.
- Cut the bacon in half so that you end up with 12 shorter pieces of bacon.
- Wrap one bacon strip around each shrimp, securing the bacon in place with a toothpick.
- Place the bacon-wrapped shrimp in a pan over medium heat and cook them until they are done, turning and rotating them occasionally so that all sides of the bacon and shrimp are cooked.
- You can also grill the bacon-wrapped shrimp or cook them on a broiler pan to allow the bacon grease to drain.
- Sprinkle each serving of arroz with grated cheese and heat in a microwave for 10-15 seconds to melt the cheese.
- Serve the bacon-wrapped shrimp over the bed of rice.
- Garnish with avocado slices and light sour cream.
