The Next Best Thing to Robert Redford

This rich, creamy and chocolaty dessert definitely isn’t for the weak. A little bit of the buttery cookie crust topped with vanilla-chocolate pudding and whipped cream goes a long way.

Turkey Chili Cheese Fries

These turkey chili cheese fries are a great way to feed your family veggies and lean protein because the turkey chili is loaded with peppers, tomatoes, ground turkey, beans and more. Chicken Pozole Blanco (Mexican Soup)

Pozole (also commonly spelled posole) is a traditional Mexican soup made with hominy and meat, such as chicken or pork. This version which comes from my world-traveling friend uses chicken breasts and comes together quickly, but the longer you let it simmer the more the flavors will develop. But in my opinion, it is all of the garnishes that “make” the soup, adding color, texture and a myriad of flavors to each spoonful.

Granola

Many store-bought versions of granola are loaded with excess sugar and other unnecessary preservatives and ingredients. But because granola is so easy to make, there really is no reason not to make it at home so that you can control what is in it. Green Eggs and Ham

I made green eggs and ham again to celebrate Dr. Seuss’ birthday which is tomorrow {March 2}. This time I used spinach juice instead of green food coloring to make the green eggs. The natural dye of the spinach turned the eggs a beautiful green and you won’t even taste the spinach.

Baked Tater Tots

Tater tots are a U.S. invention, known for their crispy exterior and small, cylindrical shape. They are traditionally deep-fried but I wanted to make a healthier version so I opted to bake them. A cross between french fries and hash browns, they are a perfect way to mix up how you serve your family potatoes.
