Chicken Parmesan Sandwich

This is a simple meal but your kids won’t even notice that they are eating tomatoes because the lycopene-packed fruits are perfectly disguised in this cheesy, saucy sandwich. And it’s a great way to use the yummy breaded chicken from our Chicken Parmigiana either as a leftover sandwich or as the primary meal. If you use a homemade marinara sauce you can blend in other healthy veggies like zucchini and summer squash without your family even noticing. But if you are short on time you can use the store-bought pasta sauce of your choice.

This is a simple meal but your kids won't even notice that they are eating tomatoes because the lycopene-packed fruits are perfectly disguised in this cheesy, saucy sandwich.
Ingredients
- 1 egg
- 1 Tbsp water
- ⅓ cup all-purpose flour
- ¾ cup grated Parmesan cheese
- 1 pound chicken breast, pounded thin and cut into strips or small chunks
- 1-2 Tbsp olive oil
- 1 tsp salt
- ⅛ tsp pepper
- 1 15-ounce jar of marinara sauce (or homemade marinara sauce, blended until smooth)
- Sandwich Buns
- Mozzarella Cheese
Instructions
- In a shallow bowl, beat the egg with the water.
- In another shallow bowl, mix the flour with ½ cup Parmesan cheese.
- Dip the chicken strips in the egg mixture and then dredge them in the flour mixture, coating both sides.
- Cook the dredged chicken strips in 1-2 Tbsp of olive oil over medium-high heat until browned on both sides.
- Sprinkle with salt and pepper to taste.
- Pour the marinara sauce over the chicken and sprinkle with the remaining Parmesan cheese.
- Bring to a boil.
- Reduce the heat to low, cover the pan and cook the chicken for 8-10 minutes or until it is done.
- Wrap the buns in foil and warm them in the oven for a few minutes at 300 degrees.
- Sprinkle grated Mozzarella cheese on both halves of the bun and top the cheese with crushed oregano and garlic bread sprinkle, if desired.
- Heat the buns in the microwave or in the oven to melt the cheese.
- Place the strips of chicken inside the bun and spoon additional marinara sauce over the chicken.
- Sprinkle with Parmesan cheese and serve immediately.
