Chicken Potsticker Soup

This is such a simple, satisfying, comforting and healthy soup recipe. Depending on which chicken broth you use, you may want to ultimately season it more to taste with different spices. I used homemade chicken broth from an oven-roasted chicken which we had rubbed with lots of spices (including Emeril’s seasoning) so the broth was plenty flavorful on its own.
For ease on a busy night, we used mini {Korean} chicken & cilantro wontons from Costco but you could also use homemade gyoza or jiaozi if you have more time. If the broth and potstickers are already prepared then the soup ultimately comes together quickly for weeknight dinners.
- 2 chicken thighs or 1 chicken breast (or leftover pieces of roasted chicken), cut into bite-sized pieces
- 4 cups chicken broth
- 20+ potstickers, depending on their size
- 2-3 cups spinach leaves
- Salt and pepper, to taste
- ¼ cup feta cheese, optional
- Bring the broth to a boil in a large pot.
- Add the chicken thighs, cover the pot and let simmer for 10-15 minutes until the chicken is cooked.
- Season the soup to taste and add the potstickers.
- Cover the pot and cook for 5-10 minutes until the potstickers are fully cooked.
- Serve hot.
