Eggplant-Salsa Fresca Bruschetta

Spicy salsa fresca on top of lightly-fried eggplant slices is a fusion dish at its finest and makes a unique bruschetta-inspired appetizer.  To-date it is my favorite way to eat eggplant.  The breadless bruschetta is bursting with color, flavor and nutrients and can even make a hearty vegetarian main course.

**Special thanks to my husband for creating this recipe last summer and Happy Father’s Day to all of you incredible dads out there!**
