Feta & Artichoke Pasta Salad

The best thing about this salad, besides how easy it is to make, is that you can add whatever veggies and seasonings you would like. It is light, refreshing and yummy when served chilled or heated. I usually don’t even measure out the ingredients but I have included an estimate that you can alter according to your taste.
Feta & Artichoke Pasta Salad

This pasta salad is light and refreshing and yummy served warm or chilled.
Ingredients
- 4 cups rotini pasta, cooked
- ⅓ cup feta cheese crumbles
- ½ - 1 tsp oregano
- ½ - 1 tsp dill, optional
- ¼ tsp salt
- ⅛ tsp black pepper
- ⅛ tsp crushed red pepper flakes
- 1 Tbsp lemon juice, to taste
- 1 Tbsp chopped green bell pepper
- 1 6.5-ounce jar of marinated artichoke hearts, chopped, reserve the marinade
- 1 Tbsp+ of the the artichoke heart marinade
- 1-2 tsp of balsamic vinegar, optional
Instructions
- Cook the pasta according to the directions on the box.
- Rinse and drain the noodles.
- Toss the cooked pasta with the remaining ingredients.
- If using marinated artichoke hearts, use some of the infused oil.
- If using canned artichoke hearts, add a little olive oil.
- Adjust the seasonings as desired.
- Serve the salad immediately or cover it with plastic wrap and let it chill.
- The pasta salad is also good when heated up.
