Chicken Pozole Blanco (Mexican Soup)

Pozole (also commonly spelled posole) is a traditional Mexican soup made with hominy and meat, such as chicken or pork. This version which comes from my world-traveling friend uses chicken breasts and comes together quickly, but the longer you let it simmer the more the flavors will develop. But in my opinion, it is all of the garnishes that "make" the soup, adding color, texture and a myriad of flavors to each spoonful.

This sweet and sour vinaigrette can be used in many ways and you can adjust the ingredients according to your taste. As for the ingredients in the salad itself, you can use whatever you have on hand.

Make this healthier version of egg rolls without losing any of the taste. I usually use egg roll wrappers for more substantially-sized rolls but wonton wrappers make smaller egg rolls that are the perfect size for a cocktail or tapas party.
