The addition of the chia seeds is a nutritional bonus because the seeds add nutrients, fiber and protein to the berry jam. But the chia seeds are a key component of the jam in another way because they act as the thickening agent, eliminating the need for extra sugar.
Instead of mixing berries throughout these muffins I dollop raspberry freezer jam in between layers of batter to make a sweet berry swirl on the top of each banana oatmeal muffin.
Homemade pop-tarts {little breakfast pastries filled with berries and/or jams and glazed with icing} are much more appetizing than the store-bought versions. And for special a treat, it's your opportunity to eat little pies for breakfast!
One morning I was playing around with my son's toast and the next thing I knew it had transformed itself into a train. Spread the train toast with your choice of jams, nut butters, Nutella, etc. Make the train as long as you'd like and fill the train cars with different fruits and other toppings.
In my mind, homemade berry jam is in another league than store-bought variations. And I love how fresh the freezer versions taste compared to the cooked and canned jellies. Each bite transports me to the berry patch as I taste the freshly-picked berries and remember all of the fun berry-picking excursions with my grandma and mom when I was little.
