Blueberry Frozen Yogurt

This {Greek} frozen yogurt came about by accident. Mid-way through making a blueberry smoothie a few weeks ago I realized that I was out of juice. Needing some form of liquid to blend up the frozen blueberries I resorted to milk. The resulting smoothie ended up more like an unsweetened blueberry milkshake. Fortunately, I always keep our ice cream maker bowl in the freezer so I was able to quickly change plans. I added a splash of vanilla extract and a dash of sugar to round out the natural sweetness of the blueberries {these can be added to taste} and then churned our blueberry smoothie-milkshake into a lightly sweet blueberry frozen yogurt. It’s a refreshing and healthy snack or dessert for summertime. I can’t wait to try this with other berries and fruit now, too!
Blueberry Frozen Yogurt |
- 4 ounces low-fat blueberry yogurt {such as Activia}
- 4 ounces plain non-fat or low-fat Greek yogurt
- 4 cups frozen blueberries
- 1/2 – 1 cup low-fat milk {just enough to blend the berries}
- 1 tsp vanilla, to taste
- 1 Tbsp sugar, to taste
- Blend the yogurt, blueberries and milk in the blender, adding just enough milk to make it blend into a smoothie.
- Stir in the vanilla and sugar to taste.
- Churn the smoothie in an ice cream maker.
- Serve as soft-serve or freeze the frozen yogurt until it is hardened.
- If frozen, let it soften at room temperature for several minutes so that it can be easily scooped.
