Raspberry Banana Oat Muffins

Instead of mixing berries throughout these muffins I dollop raspberry freezer jam in between layers of batter to make a sweet berry swirl on the top of each banana oatmeal muffin.

Chocolate Ice Cream

I used a combination of cocoa powder and semi-sweet chocolate chips which resulted in a mellow chocolate flavor, perfect for my Neapolitan ice cream. But the best part about homemade chocolate ice cream is that you can use your favorite chocolate: milk chocolate, dark chocolate or any other specialty chocolate.

Strawberry Ice Cream

This year we kicked off summer with strawberry ice cream. In addition to our inaugural strawberry shortcake, we transformed some of the juicy red berries from the berry patch into a sweet and refreshing frozen treat.

Gyros Sliders

Gyro is a sandwich consisting of meat roasted on a vertical spit which is then shaved off in thin slices and wrapped in pita bread, topped with tomatoes, onions, and tzatziki sauce. My gyro-inspired wraps are technically not gyros because the meat is not cooked in the traditional way. However, in my opinion, they taste pretty darn close to an actual gyro. And they are healthier to boot!

Train Toast

One morning I was playing around with my son’s toast and the next thing I knew it had transformed itself into a train. Spread the train toast with your choice of jams, nut butters, Nutella, etc. Make the train as long as you’d like and fill the train cars with different fruits and other toppings.
