For round two of the Ragú “New Tra-Dish” project, I have transformed eggplant parmesan into a low-carb, vegetarian lasagna. This eggplant parmesan lasagna may be hands down my favorite way to eat eggplant and I can honestly say that I do not miss the noodles.
I have had the opportunity to partner with Ragú to cook up some Italian dishes. As part of the “New Tra-Dish” project I was asked to select two of the Ragú Authentic Italian Recipes and create my own spin on them. First up, enjoy skillet chicken cacciatore as a hearty, comforting Italian chicken & vegetable soup.
Maybe I’ve gone a little overboard this season, making all sorts of vegetable soups. But they have become a staple in my family’s kitchen. Soups such as this asparagus soup are quick and provide a healthy side or main dish.
This red berry smoothie is naturally bright and the perfect color for Valentine’s Day. In addition to being a healthy option for breakfast, lunch or a snack, it could also pass for a dessert.
The combo of homemade salted caramel sauce, chocolate ganache and chopped Oregon hazelnuts has become an immediate favorite for friends and family.
I’m watching the snow continue to fall as we gear up for another fun day of skiing, sledding and tromping around the neighborhood. But first, we are savoring our morning waffles. Though it’s technically not a holiday, it sure does feel like a mini vacation around here.
Especially when cut into hearts, these chocolate coconut almond date energy bars make a nice little gift for your Valentine. And because I feel like we have been living in a sweets-saturated world since Halloween they are a welcome healthy Valentine’s Day treat.
My color choice for this naturally-dyed layer cake obviously reveals who I’ll be rooting for but I’ll give you Broncos fans a little hint: you can have your {blue and orange} cake and eat it, too, if you simply use carrot juice instead of spinach juice.
Make pumpkin cinnamon rolls in miniature form by rolling the dough into a narrower rectangle and baking them in mini muffin tins, perfect for kid portions and parties.
These sparkling sugared cranberries are simple to make and can be used in so many ways: as a garnish for desserts and beverages, as gifts, and as sweet snacks, to name a few. A couple of them dropped in each champagne glass made our Christmas cranberry mimosas beautiful and festive.
