Chile Verde

Chile verde is a Mexican stew that is traditionally made with pork and a green broth of tomatillos and chile peppers {essentially salsa verde}. To make it easy and to keep the pork tender, we use a slow cooker.
I like to serve our chile verde with corn tortillas, lime-cilantro rice or Mexican arroz and sour cream.

This Mexican stew is a flavorful meal that comes together quickly when you use a slow-cooker.
Ingredients
- 3½ lbs of pork, cut into 1-inch cubes
- 4 cups salsa verde
- ½ - 1 cup chicken broth, optional
Instructions
- Coat a pan with vegetable oil and heat it on high.
- Brown the pork cubes for one minute on each side.
- Add the salsa verde, chicken broth and pork to a slow cooker and cook it for four hours.
- Garnish the chile verde with shredded cilantro and serve it with corn tortillas, light sour cream, beans and rice.
