Easy Enchilada Casserole

This basic enchilada casserole was always one of my favorite comfort foods growing up: layers of corn tortillas, chili enchilada sauce and cheese all melted together into each bite. Little did I know that it is a dream for a busy evening. It comes together quickly {it can’t get any easier than pouring from a can!} and you can use your imagination, adding whatever you would like to the layers.

This Mexican casserole is so easy to make and you can add whatever you would like in between the layers of corn tortillas.
Ingredients
- 1 can chicken chili
- 1 can red enchilada sauce
- Corn tortillas, approximately 10
- Grated cheese
Instructions
- Mix the chili and the enchilida sauce.
- Layer the sauce mixture with tortillas and cheese in an oven-safe casserole dish.
- Start with a tortilla at the bottom of the pan.
- Spoon some of the chili mix over the tortilla and then sprinkle it with some cheese. Repeat this process, ending with the sauce and the cheese on top.
- Bake the casserole at 350 degrees for 30 minutes or until bubbly.
