Enchirito - Method

Enchirito

The Enchirito is one of Taco Bell’s trademarked menu items.  As the name implies, it is a hybrid of an enchilada and a burrito, consisting of a flour tortilla filled with ground taco meat and beans all topped with red enchilada sauce.  It is best if you make all of the components from scratch but if you are in a hurry you can substitute store-bought versions.  If your family is familiar with Taco Bell’s menu they will appreciate the fact that you can easily make the enchirito at home, and a much healthier version at that.

This homemade version of Taco Bell’s Enchirito {a hybrid of an enchilada and a burrito} is easy, healthy and satisfying.
Ingredients
  • 4 flour tortillas
  • 12 olive slices
  • Refried beans
  • Taco Meat
  • 1 lb ground beef/turkey/chicken
  • Roughly 1 cup chopped onion
  • 1-2 chopped jalapeño peppers, to taste
  • Chili powder, to taste and to color (this will make it dark red)
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1/4 tsp black pepper
  • 1 tsp garlic powder
  • 1 small can of tomato sauce (or tomato paste with chicken broth)
  • Red Enchilada Sauce
  • 3 ounces of tomato paste
  • 1 cup low-sodium chicken broth
  • 1/2 tsp garlic powder
  • 1/4 tsp salt, to taste
  • Dash of black pepper, to taste
  • 1 tsp chili powder, to taste
  • 1/8 tsp cumin, to taste
Instructions
Red Enchilada Sauce
  1. Mix all of the ingredients in a pan over medium heat.
  2. Reduce the heat to low and let the sauce simmer for 30 minutes.
  3. Season the sauce to taste.
Taco Meat
  1. Brown the meat with the chopped onion and jalapeños.
  2. Add one small can of tomato sauce.
  3. Add the chili powder until the meat becomes dark red.
  4. Heat the meat and add 1 tsp cumin, ½ tsp oregano, ¼ tsp black pepper and 1 tsp garlic powder.
  5. Let the meat simmer for 5-10 minutes, seasoning it to taste.
  6. If you want a very fine taco meat, add all of the ingredients to the pan at once and let the meat simmer in the sauce. It will break down and crumble as it cooks rather than staying in larger chunks.
Assembling the Enchirito
  1. Working with one tortilla at a time, spread refried beans down the center of the tortilla.
  2. Top the beans with taco meat.
  3. Roll up the tortilla and place it on an individual serving dish.
  4. Cover it with red enchilada sauce.
  5. Sprinkle grated cheese on the sauce and microwave the enchirito for 5-10 seconds to melt the cheese.
  6. Garnish the enchirito with three olive slices.
  7. Repeat the process.
