German Chocolate Cupcakes

Despite its name, German chocolate cake does not come from Germany. It was invented in the US back in the mid-1800’s by Sam German who developed a type of dark baking chocolate used in the cake. It is typically served as a three-layer cake but they make adorable little cupcakes.
I used my basic chocolate cake recipe with generous amounts of the coconut pecan frosting. Many of my cookbooks had similar recipes for the German chocolate cake filling but I settled on this egg-less version of the coconut pecan frosting from one of my cupcake cookbooks: Cupcakes: Luscious bakeshop favorites from your home kitchen. The rich, gooey, caramel-like filling is the star of the dessert and could be eaten by the spoonful.

- Chocolate Cupcakes
- 2 squares unsweetened chocolate
- 1/2 cup boiling water
- 1/2 cup shortening
- 2 cups sugar
- 3 eggs
- 2 cups flour
- 1 tsp baking soda
- 1 cup buttermilk
- 1 tsp vanilla
- Coconut Pecan Frosting
- 3/4 cup evaporated milk
- 1/2 cup brown sugar
- 1/2 cup butter, cut into 8 pieces
- 1 1/3 cup shredded coconut
- 1 cup chopped pecans
- Pour the boiling water over the chocolate and stir until the chocolate melts.
- Cream the shortening and the sugar.
- Stir in the eggs and then add the melted chocolate/water mixture.
- Add the flour and baking soda alternately with the buttermilk and vanilla, mixing the ingredients together until a smooth batter forms.
- Pour the batter into lined cupcake pans and bake the cupcakes for 15-20 minutes or until done.
- Combine the evaporated milk, brown sugar and butter chunks in a medium pan over medium heat.
- Bring the mixture to a simmer, stirring it occasionally.
- Remove the pan from the heat and stir in the coconut and pecans.
- Let the frosting cool and then use it to fill and ice the German chocolate cupcakes {or cake}.
- Working with one cupcake at a time, remove the liner from the cupcake and slice the cupcake in half.
- Spread coconut pecan frosting on the bottom half of the cupcake and then place the top half on top of the frosting.
- Frost the top of the cupcake with coconut pecan frosting.
