Dr. Seuss’ birthday is tomorrow, March 2. Some family friends recently shared with me their tradition of eating green eggs and ham on his birthday. What a fun and creative way to honor an author that has influenced us all, young and old alike, with his classic books.
Green eggs are easy to make. Simply add a few drops of green food coloring to your scrambled egg mixture.
- 1 egg
- 1 Tbsp milk
- Dash of salt
- Several drops of green food coloring
- 1-2 pieces of ham
- Mix the egg, the milk and the salt.
- Add the green food coloring, stirring after each drop, until the egg mixture turns the desired shade of green.
- Lightly brush butter in a pan and heat over medium heat.
- Pour the egg mixture into the pan and cook until scrambled, stirring occasionally.
- Heat another pan over medium heat and lightly brown the pieces of ham.
- In honor of Dr. Seuss, read Green Eggs and Ham to your kids and let everyone in your family enjoy a plate of green eggs and ham.

Perfect timing on this recipe with Dr. Seuss’ birthday this week! The girls love this one.
We happened to have a small jar of kale/coconut (cooked and blended until creamy) left over from the evening before. I woke up on St.Patty’s Day and thought, “why not? Green Eggs . . .” didn’t have any ham. I mixed in a small amount of the greens in before scrambling the eggs and Voila! Vibrant green eggs for breakfast! And a good way to get the veggies in!
