Shrimp Fettuccine Alfredo

The inspiration for this recipe came from my brother-in-law.  He used to own a successful Italian restaurant and made my family a to-die-for shrimp Alfredo a few years back.  Of course, it was the real deal, full of heavy cream and butter.  We wanted to duplicate this hearty comfort food but make it lighter.  We recently made the following recipe using “half and half” instead of full cream and eliminating most of the butter.  It still has the rich flavors and creamy texture but we don’t feel so guilty after each bite!

This version of fettuccine alfredo has the rich flavors and creamy texture that we love but we don't feel so guilty after each bite!
Ingredients
  • 2 Tbsp butter
  • 2 garlic cloves, minced
  • 2 cups "half and half"
  • ½ cup fresh Parmesan cheese
  • ½ tsp salt, to taste
  • ⅛ tsp black pepper, to taste
  • ½ tsp oregano
  • ¼ tsp crushed red pepper flakes, to taste
  • 1½ Tbsp chopped parsley
  • ½ lb shrimp, de-veined
  • 2 cups fettuccine noodles
Instructions
  1. Cook the noodles according to the instructions on the box.
  2. Sauté the garlic in 1 Tbsp butter over low heat.
  3. Add the "half and half" and the Parmesan cheese.
  4. Let the sauce simmer and bubble but do not let it burn, stirring it constantly.
  5. Add the seasonings and chopped fresh parsley.
  6. In a separate pan, sauté the shrimp in 1 Tbsp butter.
  7. The shrimp will turn from translucent to a solid pinkish color when they are done.
  8. Add the cooked shrimp to the simmering cream sauce.
  9. Mix in the cooked noodles and serve the pasta warm.

    OMG! This is all I have to say! I just made for dinner and it was crazy delicious. I didnt have Parmesan handy so I used mozzerella in the sauce and it was still very tasty.

    If you choose to go the full fat version, do you just replace the half & half with heavy cream? Would the amount of butter stay the same?

    Melissa, it would just be up to you. I’m sure a lot of restaurants use heavy cream and more butter, too. But for my family’s tastes using the half & half is plenty rich.

    This was AMAZING!! Cooked it for the family with some garlic bread, everyone loved it…. Hubby said he could eat it all day long!! I used I can’t believe it’s not butter and heavy cream. (I figure you only live once ;0) I also doubled the garlic, added mushrooms , and a Mattessons smoked pork sausage cut up into cubes. I used enough pasta for all of us. (I fed 5 of us) and there was still plenty left…. This does go a long way!! Can’t recommend it enough. Thanks of the recipe!!! :0)

    Half and half is part light cream and part milk. Most alfredo recipes use heavy cream so using half and half is an attempt to lighten the recipe. If you prefer, you could always use a little bit of heavy cream and some milk instead.

    How many ounces of dry fettuccine is 2 cups?

    2 cups is roughly 8-10 ounces. However, the fettuccine is really just an estimate because you can use fewer or more noodles depending on your preference.
