These light, melt-in-your-mouth cookies are bite-sized and dainty but the almond flavor packs a punch. When I was a kid, my mom made these every Christmas in the shape of Christmas trees, decorated with red and green sprinkles. You can easily make a variety of shapes for any occasion using a cookie press (such as the Wilton Cookie Pro Ultra II Cookie Press).

These light, melt-in-your-mouth spritz cookies are bite-sized and dainty but the almond flavor packs a punch.
Ingredients
- 1 cup butter, softened
- 3/4 cup sugar
- 1 egg
- 1 tsp almond extract
- 2 1/4 cups flour
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Cream the butter and the sugar until fluffy.
- Beat in the egg.
- Then add the remaining ingredients and mix them well.
- Fill your cookie press with the batter and follow the instructions of your cookie press, pressing the spritz on an ungreased cookie sheet.
- Bake the cookies for 5-7 minutes at 325 degrees until they are just starting to turn a light golden color on the bottoms and around the edges.
- If you don’t have a cookie press, you could probably roll the dough into balls and press them with the bottom of a glass or a shortbread cookie. The batter is sticky, however, and will be hard to work with if you handle it too much with your hands.

Pulling these out of the oven now & have already eaten two! They are so good. They are light, but not crumbly & sweet, but not overly so. Definitely saving this recipe!!
