Our dear Swedish family friend recounts living as a 6-year-old with her grandparents in a small Swedish town. Her grandparents lived above the family-run konditori so she woke to the smell of Kanelbullar {Swedish Cinnamon Buns} and other pastries.
Hand pies are individual servings of pie that transport well for picnics and lunchboxes. Because of the individual portions you can make a variety of fillings and the dough freezes well if you only want to bake a small amount at a time. This Easter I decided that it was time to continue a family tradition and make my family's pineapple meringue tarts in honor of Great Aunt Tadsie. Similar to lemon meringue pie, there is something light and refreshing about these tarts. And the bright yellow color and sunny pineapple flavor make them a perfect spring treat.
I love this pie during summer and I love this pie during winter (when I'm dreaming of summer). The "little wild blackberries" are the perfect combination of tart and sweet. If you don't have wild Pacific blackberries you can use the berry of your choice.
Your kids can help make these pocket pies which are like a cross between a piece of pie and a fruit-filled pastry. Let them choose their favorite fruit filling and let them cut them in the shape of their choice.
Scones are a quick bread of Scottish origin that always make me think of the British tea time. There are variations around the world and you can find scones of many different flavors but in my opinion, you can't go wrong with a plain buttery scone with berry jam.
