Homemade Calzones

We use sourdough pizza dough, made from our sourdough starter, to make these calzones.  The sourdough pizza dough recipe makes five dough balls, so whenever we make pizzas we save at least one of the dough balls for calzones.  They are a great way to use leftover pizza toppings.  Pile the ingredients inside, except for the pizza sauce which should be warmed and used as a dipping sauce.  If you are short on time you can use our Easy Pizza Crust or any other pizza dough.

Calzones are a great way to use leftover pizza toppings. Pile the ingredients inside, except for the pizza sauce which should be warmed and used as a dipping sauce.
Ingredients
  • Sourdough Pizza Crust or Easy Pizza Crust
  • Mozzarella Cheese
  • Oregano and Parmesan Cheese
  • Any desired toppings
  • Pizza Sauce, on the side
Instructions
  1. Roll out one ball of pizza dough into a 12-14 inch circle.
  2. Place the mozzarella cheese and the desired toppings on one half of the dough, leaving a 1-inch border.
  3. Lightly wet the rim of the dough with water by using either a brush or your finger.
  4. Fold the empty half of dough over the toppings and pinch the edges together to seal the calzone.
  5. Start on one end of the calzone and fold and crimp the dough over your finger until you reach the other end.
  6. Slice a ½-inch slit with a knife on the top of the calzone to allow it to vent while baking.
  7. Brush the top with olive oil.
  8. Place it on a baking pan or a pre-heated pizza stone.
  9. Bake at 400 degrees for roughly 10-15 minutes, or until golden to golden-brown.
  10. Serve the calzone with heated pizza sauce on the side for dipping.
