These little pastry muffins filled with applesauce are like a cross between apple pie and apple cake. They are perfect for a sweet breakfast or an afternoon snack. I like to serve them warm, fresh from the oven.

I recently made my pumpkin bread in the form of mini muffins. With the addition of chopped walnuts on top and a layer of cream cheese frosting in the middle, I transformed some of them into little cupcake bites, perfect for a dessert party or an afternoon treat.

When compared to many other muffins, these ones are actually pretty low in butter and sugar. I like making them in miniature because they are bite-sized and easy for my 1 1/2-year old son to eat.

These banana bars could be the best thing banana that I have ever eaten. They are not too sweet and have a delicate banana flavor. The cream cheese frosting adds a light creamy sweetness and definitely makes them a dessert. But we loved them without frosting, too.

Last summer I wanted to make habañero cornbread with the habañeros from our garden. The cornbread itself is moist and cake-like. The garden-fresh habañeros were flavorful and surprisingly not too spicy. Because not everyone likes spicy food, I have included jalapeño peppers in the following recipe. But feel free to substitute canned chiles if you want to tame it down. Or add habañero peppers if you think you are up for the spicy challenge!

It has been a summer tradition since I was a child to make these muffins with freshly-picked blackberries. Now I continue the tradition with my boys after we pick the berries on “blackberry hill.”

Scones are a quick bread of Scottish origin that always make me think of the British tea time. There are variations around the world and you can find scones of many different flavors but in my opinion, you can’t go wrong with a plain buttery scone with berry jam.
