I had some some beautiful pink peppermint ice cream so I decided to transform it into little ice cream cakes for a Valentine’s Day treat. In miniature form these cakes are basically ice cream sandwiches with cake instead of cookies for the crust.
Peppermint ice cream has a reputation of being a Christmas flavor but it doesn’t have to be reserved for the winter holidays. Its beautiful pink color is just right for Valentine’s Day and its cool peppermint flavor makes it a refreshing choice when you’re trying to beat the summer heat.

Sorbet is a lower fat alternative to ice cream and makes a refreshing dessert or snack. It is very simple to make – all you need is fruit juice and a little bit of sugar. The nice thing about making it at home is that you can control the amount of sugar added.
Stracciatella was the perfect flavor for my trial of making ice cream without a machine. To mix it up, I used Nutella as the chocolate source not only because Nutella Stracciatella has such a nice ring to it but also because my Nutella-loving niece was visiting.

These yogurt pops are essentially a frozen version of our breakfast smoothies. I used a combination of frozen blueberries and blackberries. You can mix and match the fruit, yogurt and fruit juice of your choice.
