An icy popsicle coats a creamy ice cream center to create a refreshing and nostalgic frozen treat. I had a berry puree of raspberries, strawberries and POG (Passion-Orange-Guava juice) from some other Popsicles I made and some homemade French vanilla ice cream. It turns out that this is a divine combo.

It turns out that folding blackberry maple syrup into scone dough makes a very tasty breakfast. The resulting scones are sweet, moist and yummy plain or with jam.

Strawberry season is one of my favorite times of the year. We have to wait a bit longer here in the Pacific Northwest but I am so ready, as the arrival of the strawberry marks the beginning of summer in my book. I decided to jump-start summer with these strawberry shortcake cupcakes.

I know what you’re thinking: spinach or beet juice in my buttercream frosting?! Yuck! But you will be amazed at how you don’t even taste them, especially with the small quantities being used. As far as I’m concerned, I would much rather have my family consume a little spinach, beet or other natural dye than a chemically-produced version.

This Easter I decided that it was time to continue a family tradition and make my family’s pineapple meringue tarts in honor of Great Aunt Tadsie. Similar to lemon meringue pie, there is something light and refreshing about these tarts. And the bright yellow color and sunny pineapple flavor make them a perfect spring treat.
