To celebrate Itsy Bitsy Foodies’ 1st Birthday I wanted to make something special: chocolate molten lava cake. I love that though this dessert exudes elegance, it is simple and straightforward to prepare – perfect for special occasions or any long day when you need a decadent pick-me-up.

Avocado Salad

I used my cilantro-lime vinaigrette taco salad recipe (adapted from a Cooking Light recipe) to make a refreshing avocado salad. I kept it simple with avocado, corn, black beans and bell peppers but you can adjust the salad fixings to your tastes and what you have on hand.

Happy Valentine’s Day! For a quick, fiber-filled Valentine’s Day breakfast I made bran muffin hearts with my Mini Heart Baking Pan. If you don’t have heart pans you can bake part of the muffin batter in a 9×13 pan and cut out hearts with a cookie cutter.
