When I make scones I like to make an assortment. One quick and easy variation is to knead brown sugar and cinnamon into some of the scone dough. The resulting scones are reminiscent of cinnamon rolls and can be enjoyed plain or with jam.

Inspired by the lettuce wraps at Asian-fusion restaurants such as P.F. Chang’s, this Italian rendition is satisfying and light and makes a perfect lunch, appetizer or light dinner. It is also a great way to turn leftover chicken parmigiana into a new meal, combining the main course chicken dish and the salad all into one.

Blackberry Maple Oatmeal

My recent experiment making Apple Cinnamon Oatmeal for breakfast inspired me to mix up my morning oatmeal routine again. This time, I had some leftover chunky Blackberry Maple Syrup from our Mardi Gras pancake feast. My breakfast was so good that next time I’ll be making the blackberry syrup specifically for my morning oatmeal!

Blackberry Maple Syrup

Shrove Tuesday. Fat Tuesday. Mardi Gras (literally “Fat Tuesday” in French). Pancake Day. No matter what your background is, today offers a fun excuse to have pancakes for dinner (something that was always one of my favorites when I was a kid). To celebrate, I made my buttermilk pancakes more festive with a chunky blackberry maple syrup.

Happy Valentine’s Day! For a quick, fiber-filled Valentine’s Day breakfast I made bran muffin hearts with my Mini Heart Baking Pan. If you don’t have heart pans you can bake part of the muffin batter in a 9×13 pan and cut out hearts with a cookie cutter.
