This rich and cheesy egg dish casserole is one of my family’s favorites. It is almost always a part of our breakfasts and brunches for special occasions (such as Christmas) but it is easy to make for any morning of the year.
- 10 eggs
- ½ cup flour
- 1 tsp baking powder
- 2 cups cottage cheese
- 1 lb shredded cheese (Cheddar, Monterey Jack, etc.)
- 1 cube butter (optional)
- *I only use a couple of tablespoons and it still tastes great!
- Blend all of the ingredients together.
- Add ham, sausage, green chiles or other ingredients if desired. Be sure to drain the meat before adding it to the egg mixture so that the casserole does not become watery and runny.
- Pour the egg batter into a greased 9x13 pan.
- Bake the egg dish at 350 degrees for 30-35 minutes or until golden brown and bubbly.
- A knife inserted should come out clean.
TIP: To save time in the morning make the egg batter the night before and refrigerate it in the greased pan. The next morning, put the chilled egg dish in the oven as it preheats so that the egg dish and pan can gradually warm up, preventing the pan from cracking. You can also bake the egg dish the night before and then reheat it in the oven in the morning.
