Though it wouldn't be classified as a "snow" day in most places, my boys were excited nonetheless to see the first flakes of the season quietly dust their backyard the other day. The exciting occasion, ushering in a magical season, called for a special winter breakfast.
Home sweet home. There is something about the first pancakes on the deck on a sunny summer morning that makes a new place feel like home. My boys devour these nutrient-loaded banana-oatmeal-chia hotcakes, typically with peanut butter and a splash of syrup, while I like to top mine with almond butter and berries.

Ebleskiver are similar to the American version of pancakes except that they seem to be lighter and fluffier due to the egg whites being beaten into stiff peaks. I like to make an assortment of flavors when I make ebleskiver, leaving some plain and filling the others with a variety of ingredients.
