BBQ Chicken Pizza

We had some leftover sauce from our BBQ pulled pork sandwiches so we decided to make a BBQ chicken pizza. The Fireside Blackjack BBQ Sauce – Hot! makes a flavorful pizza sauce with a zing but you can use your favorite BBQ sauce or combo of sauces to make it sweet and/or spicy. We cooked the chicken in the sauce to give it some extra flavor and then drizzled a little bit of sauce over the pizza crust. This time we used our Easy Pizza Crust but you can use the pizza crust of your choice. Depending on how heavily you load your pizza, there should be enough toppings for 2-3 pizzas.

Use your favorite BBQ sauce to make a flavorful pizza with BBQ chicken, caramelized red onion and a blend of white cheeses.
Ingredients
- 2-3 pizza crusts
- BBQ sauce
- 4 chicken thighs or 2 chicken breasts
- 1 red onion, sliced in rings
- Provolone and/or Monterey Jack cheese, shredded
- Feta cheese
Instructions
- Place the chicken on a broiling pan and broil the chicken {or BBQ it} on each side for 5 minutes until the outside of the chicken is browned.
- Remove the chicken from the heat and chop it into bite-sized pieces.
- Heat roughly ½ cup BBQ sauce in a large sauce pan over medium heat.
- Add the chicken pieces and cook the chicken for 5-10 minutes or until it is completely cooked.
- Heat a medium pan lightly-coated with cooking oil over low-medium heat.
- Add the onion rings and cook them slowly until they are soft and beginging to caramelize.
- Drizzle some BBQ sauce on the pizza crust.
- Sprinkle the sauce with the cooked chicken pieces and caramelized onion rings.
- Then top the pizza with a blend of shredded cheeses and feta cheese.
- Bake the pizza on a pizza pan or a pre-heated pizza stone at 500 degrees for 5-10 minutes or until the pizza is bubbling, lightly golden and done to your liking.
