The following recipe is my family’s take on loaded baked potato skins. The beauty of this appetizer is that you can load them up with whatever you would like: cheese, bacon, sour cream, salsa, chili, guacamole, you name it. It is also a meal where the whole family can get involved. Everyone can “load” their own potato skins.
This colorful salad of tomatoes, fresh mozzarella and basil has become one of the iconic foods of Italian cuisine and is a staple in Italy and in Italian restaurants around the world. It is simple to make and the perfect light starter to many meals.
This layered bean dip is always a crowd-pleaser at parties. At its most basic it is a 5-layer dip but it can easily become a 7-layer dip if you add multiple toppings with the cheese.
Our sourdough starter has been in the family since the mid 1950’s. We use it to make pancakes, pizza, biscuits, calzones and more!
Sweet potato fries are a yummy alternative to standard French fries. I like using a combination of sweet potatoes and yams to get a nice mix of colors.
The following guacamole recipe is my family’s favorite version but we change up the ingredients depending on what we have on hand. We really like the combination of the salsa verde with the chopped tomatoes but if we don’t have salsa verde, we use any other salsa.
This crab tostada is essentially a crab taco and is great for breakfast, lunch or dinner. I made this for breakfast last weekend with the leftover crab meat from the night before.
We have always loved seared ahi tuna but we thought it was something we could only eat at restaurants. That was until this past Thanksgiving when we were in Hawaii and our neighbor taught us how to sear ahi tuna, just like the restaurants do it.
Let the whole family help shell the crab. Your mouth will water as you watch the crab being transformed into a cheesy open-faced sandwich. Make them your main course or cut them into small square for appetizers.
Nachos are a fun and colorful way to serve a meal to your family and they are also the perfect party fare. While the tortilla chips are a splurge, the loaded nachos provide a lean protein, vegetables and calcium. Load ’em up with lime chicken {or your favorite meat}, beans, guacamole, salsa and chopped tomatoes and let everyone dig in.
