My favorite time of year to make this salsa is in the summer and early fall when we are harvesting the tomatoes and peppers from our garden. It is great in many dishes, including fish tacos, omelettes and fajitas.

We incorporate this salsa verde into many of our dishes. Outside of traditional Mexican food, it is also excellent for marinating chopped ham and sausage for breakfast dishes. Make it as spicy (or not spicy) as you would like by adjusting the peppers in the mix.

This version of Cha Han is at the top of my comfort food list. But unlike most comfort foods, it is actually pretty healthy. I like to eat it with grilled scallops or teriyaki chicken.

The best thing about this salad, besides how easy it is to make, is that you can add whatever veggies and seasonings you would like. It is light, refreshing and yummy when served chilled or heated.

Macaroni and cheese is the ultimate comfort food. I like to use a variety of cheeses and mix ham chunks, chicken sausage and/or veggies into the creamy noodles.

This cornbread has an intense corn flavor and a coarse texture. I like to make cornbread muffins but you can also bake it in a cake pan.
