Banana “Ice Cream”

Could it be that bananas are the only ingredient in this frozen treat and yet it has the creamy texture of traditional ice cream? Unbelievably, yes! It is so easy to make (you don’t even need an ice cream maker). And I love the fact that when my son now screams for ice cream, I can give him this — an elegant form of frozen bananas.

Oven-Roasted Chicken

Roasting a whole chicken in the oven or on the BBQ is easier than than you think, it just takes several hours (depending on the size of the chicken). This is my take on the roasted chicken that my mom would make for my family when I was a kid. The chicken goes well with just about any side dish. And the leftover herbes de Provence-infused meat makes yummy sandwiches the following day.

This is such an easy dessert and a great way to use up pie crust scraps for the garnish. Sugar cookies would also be a great topper if you don’t have any pie crust handy.
