Blackberry Muffins

It has been a summer tradition since I was a child to make these muffins with freshly-picked blackberries. Now I continue the tradition with my boys after we pick the berries on “blackberry hill.”

Pizza Pasta

This pasta dish is sneaky because it disguises healthy veggies and makes them appealing to kids (and adults). There is nothing more satisfying than watching your child scarf down spinach and tomatoes… and ask for seconds!

Shrimp Fettuccine Alfredo

The inspiration for this recipe came from my brother-in-law. He used to own a successful Italian restaurant and made my family a to-die-for shrimp Alfredo a few years back. Of course, it was the real deal, full of heavy cream and butter. We wanted to duplicate this hearty comfort food but make it lighter. Our version still has the creamy, rich flavors and textures but we don’t feel so guilty after each bite!

Orange Rolls

These light buttery rolls remind me of brioche. The orange flavor is the perfect combination of sweet and tart. In my family, we have these on Christmas morning and for our Santa Lucia breakfast…but I wish I could eat them every morning!

Naan Bread

Naan bread is traditionally baked in a clay oven called a tandoor. Most of us aren’t lucky enough to have a tandoor in our home so this version of naan bread is baked on a BBQ or in a conventional oven. It is a fun family cooking project and learning experience. Leave it plain or top with cheese, garlic, onion or other desired ingredients. Serve it with curries, rice dishes or soups.

Taco Meat

This taco meat doesn’t require any store-bought seasoning packets but it is just as easy to make. It is so juicy and flavorful that you can easily substitute ground turkey or chicken for a healthier option (and some people might not even notice a difference!).

Egg Dish

This rich and cheesy egg dish casserole is one of my family’s favorites. It is almost always a part of our breakfasts and brunches for special occasions (such as Christmas) but it is easy to make for any morning of the year.

Flan

This sweet, rich custard dessert is surprisingly simple to make. Just be sure to allow time for it to chill overnight.

Chocolate Cake

This chocolate cake is my “go-to” recipe for chocolate cupcakes and birthday cakes. In fact, I’ve pretty much stopped trying other chocolate cake recipes because this one is so good and everyone loves it!

These gooey brownies are super easy to make. Serve them à la mode for a melt-in-your-mouth dessert.
