Home sweet home. There is something about the first pancakes on the deck on a sunny summer morning that makes a new place feel like home. My boys devour these nutrient-loaded banana-oatmeal-chia hotcakes, typically with peanut butter and a splash of syrup, while I like to top mine with almond butter and berries.
With a pound cake star, whipped cream frosting and strawberries or an assortment of berries, these patriotic pops are like a deconstructed {straw}berry shortcake.
This watermelon {cake} is a fun twist on fruit salad and makes a great healthy dessert or snack and beautiful centerpiece for any party or function. Use your favorite fruits or whatever is in season to decorate the watermelon.
My sister surprised me with this Kit Kat cake on my birthday this past week. I have seen versions of it filled with M&M's and other candies but I have to say that I love how it looks overflowing with berries. I wish we had pictures of all of the kids sneaking away with the Kit Kat bars and their little hands grabbing all of the berries.
Berry crumbles/crisps are one of my favorite desserts, especially in the heat of the summer, because the fruit takes center stage while a sweet and delicate oatmeal streusel tops it off. It offers the flavors of berry pie that I love but in a lighter and healthier form.
With or without silly faces, these fruit and spinach smoothies make a quick, healthy and kid-pleasing breakfast, snack or dessert.
This fruit salad is all about the presentation and will be a favorite with your family and friends for its color and festive appearance. Simply scoop out the watermelon flesh with a melon baller and mound an assortment of fruit chunks into the watermelon "bowls."
These yogurt pops are essentially a frozen version of our breakfast smoothies. I used a combination of frozen blueberries and blackberries. You can mix and match the fruit, yogurt and fruit juice of your choice.
Popsicles are super easy to make as long as you have some time to let them freeze. At the most basic level all you need is some fruit juice. For extra vitamins and some oomph in flavor, I like to blend in fruit, leaving some of the berries whole and some of the other types of fruit in chunks. You can use whatever combo of juices and fresh or frozen fruit that you'd like.
For an easy 4th of July breakfast, top the pancakes of your choice with strawberries, homemade whipped cream and blueberries for a red, white and blue treat.
