I have recently found that quinoa is a great addition to my back-to-school repertoire because these soy-ginger quinoa salad wraps, for example, can be made in advance and stored in the refrigerator, ready to go for lunches, after-school snacks, and busy weeknight dinners.
Tzatziki sauce {also known as cucumber salad} can technically be served as a dip or a salad but for me, I have always known it as the sauce that makes gyros.
This cucumber salad is inspired by the Japanese cucumber salad that is served in sushi restaurants. It's the perfect light starter for many meals.
This salad is light, refreshing and easy to make. It's also great the next day so you can make it in advance.
