Horchata
Though I know that horchata is typically served in the heat of summer as a cool, refreshing beverage, I also think of this cinnamon-spiced rice drink in autumn. When you make it at home you can use less sugar, sweetening it to taste.

I know what you're thinking: spinach or beet juice in my buttercream frosting?! Yuck! But you will be amazed at how you don't even taste them, especially with the small quantities being used. There is something about homemade ice cream which is simply the best. Fortunately, making ice cream is so easy these days. You can stir the ice cream to reach your desired consistency. I used a recipe for vanilla tuiles from The Bon Appétit Cookbook to make homemade ice cream cones. Though they are delicate cookies, they have a rich buttery, vanilla flavor and they complement any flavor of ice cream.

This cake has a rich buttery vanilla flavor but when compared with many other cakes, it is surprisingly not that bad for you. It is moist and great for building theme cakes and when paired with buttercream frosting it's one of my family's all-time favorite cake/cake pop combos.

This coconut macaroon tart shell would be a great crust for many pies and tarts. It is quick and easy to mix it together and press it into the pans. Fill the tart shells with pudding, fruit or any other filling of your choice.
