Goofy Cake

Kids will love making this cake. It is quick, easy and results in a moist chocolate cake. I like to ice the cake with vanilla buttercream frosting but you can decorate your cake as desired.

Smoked Salmon

It has been salmon season in the Pacific Northwest. With my husband’s last catch we smoked some of the salmon fillets in a wood chip smoker. Serve the smoked salmon with crackers and cheese for a healthy snack and an easy ‘gourmet’ hors d’oeuvre.

Pumpkin Soup

My inspiration for this soup came from a curried butternut squash soup that was one of my favorites at a restaurant when I was younger. I used a basic recipe from The All New All Purpose Joy of Cooking as my guide, but I made several slight variations and ultimately added a bit of curry powder. For a festive autumn meal, serve the soup in hollowed out pumpkins.

Caramel Apples

With the arrival of fall, it’s time for caramel apples. They are easy to make and everyone in the family can get involved. Leave them plain or dip them in chopped Heath toffee bar, chopped peanuts, or any other sweet of your choice.

Mini Pumpkin Muffins

I recently made my pumpkin bread in the form of mini muffins. With the addition of chopped walnuts on top and a layer of cream cheese frosting in the middle, I transformed some of them into little cupcake bites, perfect for a dessert party or an afternoon treat.

Ice cream is a refreshing combo with the zing of the ginger in the cookies. Use the ice cream of your choice.

Blueberry Sorbet

This refreshing sorbet highlights blueberries so it was a natural choice for one of the sweets on my Tapas For a Cure menu. You can add the simple sugar syrup to taste, making the blueberry purée mixture as sweet or tart as you would like.

French Vanilla Ice Cream

There is something about homemade ice cream which is simply the best. Fortunately, making ice cream is so easy these days. You can stir the ice cream to reach your desired consistency. A word of warning, though: if you take a bite while it’s at milkshake or soft-serve consistency, you may never finish stirring it. It’s that good.

Chocolate & Banana “Ice Cream”

Now that I’m hooked on banana “ice cream” (an easy, creamy frozen dessert simply made of bananas) I decided to try adding chocolate, which is never a bad decision, in my opinion.
