Mickey Mouse Clubhouse Cookies

Minnie & Mickey Mouse rainbow cookies added color to the treats table at my son’s Mickey Mouse Clubhouse birthday party and dog bone cookies were the perfect way to include Pluto in the festivities. Both cookies were simple, festive additions to the dessert spread.

Mickey Mouse Marshmallow Treats

Rice Krispie treats are such an easy filler for parties and they are always a crowd-pleaser. To fit the Mickey Mouse Clubhouse theme, I mixed in some Clubhouse-colored M&M’s and cut the marshmallow treats out with a Mickey Mouse cookie cutter.

White Chocolate Craisin Oat Bars

This white chocolate & dried cranberry oatmeal combination is another one of my homemade energy bar favorites and as with the other flavors, you won’t even notice that the healthy snack bars are full of wholesome goodness {whole wheat, wheat germ, oatmeal, flax seed and Greek yogurt!}.

Homemade Energy Bars

These bars are a cross between a granola bar, muffin and energy bar. They are a nutrient-dense snack but they satisfy a cookie and overall sweet tooth craving.

St. Patrick’s Day Cookies

We don’t have a shamrock cookie cutter so we improvised with green hearts and iced a stem on the plate. Spinach juice gave the powdered sugar glaze its beautiful natural green color.

Making Gingerbread Houses

Making gingerbread houses definitely takes more time than buying the pre-made kits but it allows you to customize the design. And if you’re planning to eat the house, the homemade gingerbread and buttercream frosting taste a lot better than packaged store-bought kinds, too!

Chocolate Revel Bars

The name of these cookies -chocolate revel bars – is fitting because you will take great pleasure or delight in eating them. Fortunately, I made them for a gift otherwise I would have had a hard time not eating the whole pan in one sitting.

Rainbow Fruit Pizza

Given my son’s ongoing interest in all the colors of the rainbow, I decided to incorporate the rainbow into our dessert. A thin, chewy sugar cookie topped with refreshing lemon curd makes the sun and an array of summer’s fruits makes the rainbow.
