I’ve received such good reviews about my homemade chicken sausage that I decided to transform it into meatballs. Spinach is the star ingredient that earned these meatballs a spot on my Tapas For a Cure menu, but I also love the fact that they are made with chicken.
This cream puff recipe is simple to make. And as an aside, the vanilla pudding cream filling is incredible and is the perfect complement to fresh fruit or chocolate cupcakes.
This rendition of a chicken and eggplant Parmesan sandwich is satisfying and light, a perfect summer meal. Wrap the chicken and eggplant in large lettuce leaves for a main course or in smaller leaves for an appetizer.
Eggplant parmigiana is a great way to get your family to eat eggplant because by dredging it in egg and flour, it becomes soft and tender and the flavor mellows out. In this rendition of eggplant parmesan, I have combined chicken and eggplant parmesan strips into a sandwich. When mixed in with the chicken strips, your family may not even notice that eggplant is included.
I love this pie during summer and I love this pie during winter (when I’m dreaming of summer). The “little wild blackberries” are the perfect combination of tart and sweet. If you don’t have wild Pacific blackberries you can use the berry of your choice.
Frittatas and Spanish tortillas are very similar. A common version of the tortilla espaƱola is made with a simple combination of eggs and potato. In this rendition, I added spinach, feta cheese, bacon and red bell pepper.
If you like Almond Roca, then these bar cookies will be a hit in your household. And they are a cinch to make.
Huevos rancheros is a popular Mexican dish consisting of fried eggs on top of lightly-fried corn tortillas, all smothered in cooked salsa. My family’s version of this Mexican breakfast incorporates warmed homemade corn tortillas, chunks of chicken, black beans, fried eggs, salsa verde and cilantro.
There is something about homemade ice cream which is simply the best. Fortunately, making ice cream is so easy these days. You can stir the ice cream to reach your desired consistency. A word of warning, though: if you take a bite while it’s at milkshake or soft-serve consistency, you may never finish stirring it. It’s that good.
Now that I’m hooked on banana “ice cream” (an easy, creamy frozen dessert simply made of bananas) I decided to try adding chocolate, which is never a bad decision, in my opinion.
