This white chocolate & dried cranberry oatmeal combination is another one of my homemade energy bar favorites and as with the other flavors, you won’t even notice that the healthy snack bars are full of wholesome goodness {whole wheat, wheat germ, oatmeal, flax seed and Greek yogurt!}.
These bars are a cross between a granola bar, muffin and energy bar. They are a nutrient-dense snack but they satisfy a cookie and overall sweet tooth craving.
In this comforting, creamy soup sans cream, warm hints of curry and ginger round out the natural sweetness of the carrots. It is a healthy, satisfying soup any time of year and it’s a festive spring and Easter meal when served with bunny grilled cheese sandwiches or Annie’s All-Natural Bunny Crackers.
We were in the mood for a roasted chicken but I wanted to change the routine. So I seasoned this oven-roasted chicken with salsa verde, cilantro, limes and cerveza, making the chicken perfect for tacos, enchiladas or any other Mexican-style meal.
With or without silly faces, these fruit and spinach smoothies make a quick, healthy and kid-pleasing breakfast, snack or dessert.
One of our favorite meatball meals has become a simple sandwich: meatballs smothered in spaghetti sauce and provolone cheese and sandwiched between a lightly toasted hoagie roll. It’s easy, comforting, healthy and family-friendly.
Traditional pesto is intense and, as I guessed, you don’t even notice that the spinach is in there because the other flavors {basil, garlic and pine nuts} dominate. As with basic pesto, a little bit goes a long way. You just need a couple of spoonfuls to stir into a pasta sauce or spread on top of a pesto cheese bread.
Lunches around here have been pretty fun lately because my son and I have been using our Christmas and winter cookie cutters to make edible art scenes. This is one instance where I think playing with food is perfectly acceptable! It is especially perfect for a cold winter day when you need an indoor project.
I have always wanted to make a pumpkin bread {or pumpkin muffins, in this case} and be able to call it healthy. I have always wanted to be able to say: it’s a serving of fruit/veggies, right?! and not have it be a joke. I have finally achieved this with these nutrient-loaded pumpkin muffins that provide a serving of pumpkin and satisfy your sweet tooth at the same time.
In a nutshell, these caramelized beets are the best beets that I have ever had. They are a nutritious, colorful and tasty addition to the dinner table.
