Tahini-less Hummus
We didn’t miss the tahini in this tahini-less hummus. To round out the flavor and texture, I blended in some feta and then topped the hummus with olive oil, feta crumbles and a dash of paprika and cayenne pepper.

Hummus is a great source of protein and fiber so it makes a healthy and satisfying snack. I like to serve it with pita bread wedges and veggie sticks, or spread it on sandwiches and wraps.

I made this African Peanut Stew to celebrate Africa Day yesterday. Variations of the stew can be found throughout West Africa. This version has edamame which offers a healthy dose of protein along with other nutrients but you can also add meat if you would like.

These spicy fried fish fillets from Kenya are simple to make. I was surprised to discover that the seasoning is very similar to other rubs and marinades that we often use for chicken and fish, comprised of several of our “go-to” ingredients that you, too, will most likely have on hand.
