When Pepperidge Farm contacted me about the “Puffection” Holiday Entertaining challenge I was intrigued and gladly accepted. The first part of the challenge involved cooking an existing Pepperidge Farm recipe. I chose these individual Chocolate Fondue Cups because they are festive and perfect for holiday (or anytime) entertaining.
Fortune cookies have been on my list for a while now so when DailyBuzz Moms announced the Thanksgiving Kids Table 9×9 I thought that it was the perfect opportunity to make “I am Thankful for…” Fortune cookies.
Sometimes basic is best, as with this simple roasted kabocha squash soup flavored with sage mushrooms. Inspired by all of the beautiful and interesting winter squash that we’ve seen on our recent trips to local farms and pumpkin patches, this soup satisfies my craving for warm comfort foods now that the chilly fall temperatures are here to stay for a while.
The day after I made the chicken quinoa taco salad I made quesadillas with the leftovers. Considering that the taco salad was acutally a leftover meal, that means that I got three completely different meals out of our chicken tacos. That’s music to my ears for busy weekday dinners and lunches!
In this cordon bleu-inspired chicken, the chicken is stuffed with pistou/pesto, artichoke hearts, feta cheese and roasted red peppers.
This chilled vegetable soup is the perfect light and refreshing meal or side dish during the heat of summer and a great way to use up tomatoes and cucumbers from your garden or market.
This quinoa salad with peanut dressing is full of colorful veggies and packed with nutrients and lean protein. It’s a refreshing summer salad served warm or chilled.
This fusion of Mexican and Italian cuisines was inspired by the Italian Caprese salad. Tomatoes are still the base of this stacked salad but I have traded out the other ingredients {mozzarella cheese, basil and balsamic vinaigrette} for their south-of-the-border counterparts that my family loves so much.
In my family we don’t have a structured meal plan but we definitely tend to fall back on our simple favorites for busy nights. I love it when we find a new quick and easy meal that can be added to our weeknight meal rotation. This spicy peanut sauce makes the cut!
Gyro is a sandwich consisting of meat roasted on a vertical spit which is then shaved off in thin slices and wrapped in pita bread, topped with tomatoes, onions, and tzatziki sauce. My gyro-inspired wraps are technically not gyros because the meat is not cooked in the traditional way. However, in my opinion, they taste pretty darn close to an actual gyro. And they are healthier to boot!
