Inspired by one of my family's favorite appetizers {Stuffed Jalapenos}, a recipe which I will share with you soon, I decided to stuff some mini sweet peppers that were leftover from a Cinco de Mayo fiesta at my son's preschool. A variation of my quinoa "taco" salad {without chicken} was a healthy stuffing that was easy to mound inside the small peppers.
Though chocolate and avocado seem an unlikely pair, they share some rich, comforting qualities and make a surprisingly good match in this chocolate avocado cake.
Though chocolate and avocado seem like an unlikely match, they pair up nicely in this chocolate glaze that is the perfect finishing touch to chocolate avocado cupcakes. A hybrid between a buttercream frosting and a powdered sugar glaze, the avocado replaces the butter but you wouldn't even know that there is avocado in it.
This colorful and flavorful Mexican soup is super easy to make and can even be done in a slow-cooker. With shredded chicken, beans and veggies it makes a light and healthy meal.
These turkey chili cheese fries are a great way to feed your family veggies and lean protein because the turkey chili is loaded with peppers, tomatoes, ground turkey, beans and more. Plus, by baking the hand-cut French fries, this rendition of chili cheese fries offers a healthier alternative to the standard ballpark dish.
Pozole (also commonly spelled posole) is a traditional Mexican soup made with hominy and meat, such as chicken or pork. This version which comes from my world-traveling friend uses chicken breasts and comes together quickly, but the longer you let it simmer the more the flavors will develop. But in my opinion, it is all of the garnishes that "make" the soup, adding color, texture and a myriad of flavors to each spoonful.
I used my cilantro-lime vinaigrette taco salad recipe (adapted from a Cooking Light recipe) to make a refreshing avocado salad. I kept it simple with avocado, corn, black beans and bell peppers but you can adjust the salad fixings to your tastes and what you have on hand.
After discovering how simple it is to make sushi at home and inspired by the colorful rainbow roll, I decided to make a more kid-friendly version of this popular sushi roll. Your kids can help roll the sushi and brainstorm different toppings to give the roll the rainbow colors.
Once I realized how easy it is to make sushi at home, I wanted to try making one of my favorite sushi rolls: Spicy Scallops. To make it appropriate for my toddler I decided to cook the scallops. If you or your kids don't like spicy foods, you can omit the sriracha sauce.
Making sushi at home is easier than you think and you can use your imagination, disguising many healthy foods within each roll. Sushi is also very kid-friendly because your kids can help make different rolls, with or without seafood, according to each person's tastes.
