My family likes to add chicken or chicken sausage, and feta crumbles to the creamy avocado pasta. Outside of pasta dishes, the avocado pesto is also like an Italian-style guacamole that is flavorful simply as a dip for breadsticks and veggies.
This fusion of Mexican and Italian cuisines was inspired by the Italian Caprese salad. Tomatoes are still the base of this stacked salad but I have traded out the other ingredients {mozzarella cheese, basil and balsamic vinaigrette} for their south-of-the-border counterparts that my family loves so much.
I recently received a box of California Avocados from the California Avocado Commission as part of the Foodbuzz Tastemaker Program. My family did not have any trouble devouring all six avocados since avocados are one of our favorite foods.
Enchiladas are a great way to get your family to eat seafood. Shrimp, scallops, crab and cod are all good options for the filling because they are firm and have mild flavors.
In our quest to re-create the burrito mojado from Café Río, one of our favorite Mexican restaurants, we made these chicken burritos. Burrito mojado is Spanish for "wet burrito" which translates into a burrito drenched in enchilada sauce and melted cheese.
The following guacamole recipe is my family's favorite version but we change up the ingredients depending on what we have on hand. We really like the combination of the salsa verde with the chopped tomatoes but if we don't have salsa verde, we use any other salsa.
Pairing salmon and spinach with ingredients such as feta cheese, avocado, tomatoes, and salad dressing is an excellent way to introduce your family to salmon and let them start to appreciate the flavor of this healthy fish.
