Frittatas and Spanish tortillas are very similar. A common version of the tortilla espaƱola is made with a simple combination of eggs and potato. In this rendition, I added spinach, feta cheese, bacon and red bell pepper.
Bacon is a great way to get your family to try scallops. Scallops generally have a mild flavor and firm texture so wrapped in crisp, salty bacon they will probably be appealing to people of all ages. These are a great appetizer or main dish.
With a bag of freshly-picked morel mushrooms, I decided to make a morel mushroom and bacon pizza. The subtle earthiness of the morels was a perfect match for the saltiness of the bacon.
Make an assortment of mini hamburgers for a party or a fun family meal. Lay out a smorgasbord of toppings and let everyone build their own slider. Serve the mini burgers with fruit salad, potato salad, french fries or sweet potato fries.

This was one of my husband's favorite meals when he was a kid. He remembers always ordering it at Mexican restaurants. It's a new meal for me. But, what's not to love?! Bacon makes everything better. And it's a fun presentation for kids.
The following recipe is my family's take on loaded baked potato skins. The beauty of this appetizer is that you can load them up with whatever you would like: cheese, bacon, sour cream, salsa, chili, guacamole, you name it. It is also a meal where the whole family can get involved. Everyone can "load" their own potato skins.
