These spicy fried fish fillets from Kenya are simple to make. I was surprised to discover that the seasoning is very similar to other rubs and marinades that we often use for chicken and fish, comprised of several of our "go-to" ingredients that you, too, will most likely have on hand.
This version of Moqueca de Peixe e Camarao (Brazilian Fish and Shrimp Stew) comes from the state of Bahia in northen Brazil. It reminds me of a Thai curry because of the coconut milk. You can make it with only fish - Moqueca de Peixe - or only shrimp - Moqueca de Camarao - but we liked it with the combination of seafood.
Nachos are a fun and colorful way to serve a meal to your family and they are also the perfect party fare. While the tortilla chips are a splurge, the loaded nachos provide a lean protein, vegetables and calcium. Load 'em up with lime chicken {or your favorite meat}, beans, guacamole, salsa and chopped tomatoes and let everyone dig in.
My favorite time of year to make this salsa is in the summer and early fall when we are harvesting the tomatoes and peppers from our garden. It is great in many dishes, including fish tacos, omelettes and fajitas.
