Once I realized how easy it is to make sushi at home, I wanted to try making one of my favorite sushi rolls: Spicy Scallops. To make it appropriate for my toddler I decided to cook the scallops. If you or your kids don't like spicy foods, you can omit the sriracha sauce.
Enchiladas are a great way to get your family to eat seafood. Shrimp, scallops, crab and cod are all good options for the filling because they are firm and have mild flavors.
Bacon is a great way to get your family to try scallops. Scallops generally have a mild flavor and firm texture so wrapped in crisp, salty bacon they will probably be appealing to people of all ages. These are a great appetizer or main dish.
Light coconut milk is a great ingredient for disguising seafood and veggies.
Paella has become the national dish of Spain and a symbol of Spanish cuisine in the eyes of many people outside of Spain. However, though you can find paella throughout Spain, it is truly a regional specialty of Valencia. Traditionally, the seasonings in paella are simple - saffron, garlic, salt and pepper - allowing the natural flavors of the meats and seafood to shine. But the beauty of this dish is that you can load it with the ingredients of your choice. My personal favorite is paella mixta, made with all sorts of seafood, sausage and chicken.
You will know by how colorful this meal is that it is healthy. Introduce your kids to seafood by sneaking scallops and shrimp into kid-friendly tacos.
