I’ve received such good reviews about my homemade chicken sausage that I decided to transform it into meatballs. Spinach is the star ingredient that earned these meatballs a spot on my Tapas For a Cure menu, but I also love the fact that they are made with chicken.

Eggplant parmigiana is a great way to get your family to eat eggplant because by dredging it in egg and flour, it becomes soft and tender and the flavor mellows out. In this rendition of eggplant parmesan, I have combined chicken and eggplant parmesan strips into a sandwich. When mixed in with the chicken strips, your family may not even notice that eggplant is included.

Frittatas and Spanish tortillas are very similar. A common version of the tortilla espaƱola is made with a simple combination of eggs and potato. In this rendition, I added spinach, feta cheese, bacon and red bell pepper.

Oven-Roasted Chicken

Roasting a whole chicken in the oven or on the BBQ is easier than than you think, it just takes several hours (depending on the size of the chicken). This is my take on the roasted chicken that my mom would make for my family when I was a kid. The chicken goes well with just about any side dish. And the leftover herbes de Provence-infused meat makes yummy sandwiches the following day.
