There is something about homemade ice cream which is simply the best. Fortunately, making ice cream is so easy these days. You can stir the ice cream to reach your desired consistency. A word of warning, though: if you take a bite while it’s at milkshake or soft-serve consistency, you may never finish stirring it. It’s that good.

Making homemade lemonade with fruit purée was such a hit with my family that the natural progression was to turn the strawberry and blueberry lemonade into popsicles. Making popsicles is easier than you think and allows you to control the amount of sugar in them.

I made this African Peanut Stew to celebrate Africa Day yesterday. Variations of the stew can be found throughout West Africa. This version has edamame which offers a healthy dose of protein along with other nutrients but you can also add meat if you would like.

Lentil Dal

Lentils are part of the legume family and though they are small they pack a nutritional punch. They are high in protein so are often a staple in vegetarian diets. Lentil dal is an Indian dish made of stewed lentils that is usually seasoned to taste. Serve with rice or naan bread.

Natural Easter Egg Dyes

Appreciate the vivid colors and natural beauty of fruits, vegetables and spices: dye your Easter eggs with everyday foods rather than boxes of chemical colorings. This is a great family project and learning experience. Though it will take a little more planning than your basic Easter egg dye kit, I think you will find the extra time well worth it. Even though I’m a “grown-up,” I felt a child-like excitement watching the eggs turn colors in bowls of cabbage, spinach, blueberries and more!
