When I saw this “owl egg shaper” on Pinterest I couldn’t resist making a version of my own. My oldest son got a hoot out of his breakfast and I loved playing with food to create an easy, edible art snack that doesn’t involve sugary sweets.

At its base, this soup is simply a vegetable {mushroom} soup with the sautéed and softened veggie mix pureed until smooth. It’s cream of mushroom soup without the full cream.

The first time I made this soup we had an array of summer veggies in the refrigerator (zucchini, yellow squash, tomatoes, spinach and mushrooms) that needed to be used up. I started adding ingredients to the slow-cooker and this crock-pot minestrone was born.

I don’t know about you, but with the soggy, windy weather this week we spent the last weekend holed up in the house. I admit that at moments we went a little stir crazy but deep down I think we enjoyed the excuse to pause and recover from our hectic summer schedule.
