This lemon-thyme-honey vinaigrette is light, refreshing and easy to make. I tossed my salad with apple, Havarti cheese, asparagus and pumpkin seeds but you can add whatever ingredients you would like.

One of my favorite comfort foods is mushroom risotto, so when we came home from morel mushroom hunting with a bag of morels, I couldn't wait to try morel risotto. I happened to have some local asparagus so I added it to the mix.

With a bag of freshly-picked morel mushrooms, I decided to make a morel mushroom and bacon pizza. The subtle earthiness of the morels was a perfect match for the saltiness of the bacon.

Kids typically don't like salads but you might find this one to be different. A Niçoise salad is kind of like the French version of a Cobb salad. It is loaded with such a variety of ingredients that your kids might actually have fun trying all of the different toppings. And it is a great way to use up leftover Easter eggs!
